Meatless Monday with Portobello Salad with Spicy Mustard Dressing

Hello and welcome (back) to the blog and thank you for joining us for another Meatless Monday. Miratel Solutions took the Meatless Monday pledge at its Toronto contact centre and mail house as part of its CSR business initiatives in support of reducing meat consumption by 15% to improve personal health and the health of the planet.

We’ve been featuring some 100% raw vegan recipes lately including a raw Asian salad and a raw zucchini salad with garlic and tomatoes and our recipe today could be classified as moderate raw. A moderate raw meal includes a 40%-60% raw component which is easy to achieve in the summer months when vegetables are at their best. Our recipe today comes courtesy of Veganomicon: The Ultimate Vegan Cookbook.

Ingredients
Roasted Portobellos:
1/2 cup white wine
1 tbsp olive oil
2 tbsp soy sauce
2 tbsp balsamic vinegar
2 cloves garlic, minced
2 large portobello caps

Dressing:
1/4 cup prepared spicy, smooth mustard
3 tbsp olive oil
1/4 cup red wine vinegar
2 tbsp pure maple syrup

Salad:
8 cups mixed greens
1 avocado, peeled, halved, pitted, and thinly sliced
1 small red onion, sliced into very thin half-moons
1 15-oz can chickpeas, rinsed and drained

  1. Combine the mushroom marinade ingredients in shallow glass dish, then place the portobellos upside down in the marinade. Spoon a bunch of the marinade into the mushroom caps to form a small pool. Preheat a grill to high heat and marinate for 20 minutes.
  2. Grill the mushrooms over direct heat, about 4 minutes per side. When done, remove from heat, and when cool enough to handle, slice and set aside.
  3. Whisk the dressing ingredients together in a bowl, then throw all the salad ingredients in a large bowl and pour the dressing over. Toss to coat.
  4. Place the greens on a plate, top with the portobellos, and serve.

This recipe yields 4 main portions and really is a complete meal as the balance of the vegetables, avocados and chickpeas make for a nutrition packed dish. Plus it incorporates raw vegetables into your diet which is always a good thing.
