Meatless Monday with Leek and Rapini Tart

Hello and welcome (back) to the Miratel blog for another Meatless Monday. We took the Meatless Monday pledge as part of our CSR business initiatives in support of reducing meat consumption one day per week to improve the health of people and the planet. Every Monday we share a different vegetarian recipe and try to keep them simple for weeknight preparation.

Tonight we are making a light yet satisfying meal made with great seasonal vegetables. This leek and rapini tart is easy to make and would make a great lunch or dinner. Anytime you can eat local, seasonal products you are making your Meatless Monday all the greener. This recipe comes courtesy of Canadian grocer Longo’s Experience magazine.

Ingredients:

  • 1 9-inch (23 cm) refrigerated pie dough crust (or you can make your own)
  • 2 tbsp (30 mL) extra virgin olive oil
  • 4 leeks, white and pale green parts only, thinly sliced
  • 1/4 cup (60 mL) dry white wine
  • Half bunch rapini, trimmed and chopped into 1 inch (2.5 cm) pieces (about 5 cups/1.25 L)
  • 2 eggs
  • 1 cup (250 mL) shredded Old or Extra Old cheddar cheese
  • 1/3 cup (80 mL) 18% table cream
  • 2 tbsp (30 mL) Dijon mustard

Directions:

  1. Unroll pie crust and place into 8 inch (20 cm) tart pan with removable bottom. Fold excess over into sides and press dough gently into the sides; set aside.
  2. In a skillet, heat oil over medium heat.
  3. Add leeks and sauté for about 5 minutes or until softened.
  4. Add white wine and rapini. Cook, stirring 3 to 4 minutes or until the liquid has evaporated and rapini has wilted slightly.
  5. In a bowl mix eggs, 2/3 cup (160 mL) of the cheese, cream and Dijon mustard.
  6. Add rapini mixture and pour into tart shell. Top with remaining 1/3 cup (80 mL) of cheese.
  7. Bake in 375°F (190°C) oven for 35 minutes or until top is golden and custard is cooked through.

The recipe for a leek and rapini tart will yield six portions and takes twenty minutes to prepare and thirty-five minutes to cook. To make this dish even healthier you can substitute a traditional pre-made crust with a pre-made (or homemade) whole wheat/whole grain or spelt crust. You can also substitute the dry white wine with vegetable or vegetarian chicken stock; though the wine will cook off during the baking process.

The tart “has a tender creamy filling and boasts the nutritional elements of folic acid, vitamin K and vitamin C of the rapini.” Each portion has “340 calories; 11 g protein; 22 g fat; 22 g carbohydrate; 1 g fibre; 370 mg sodium.” Complete the meal with a healthy raw salad mixed with your favourite oil and vinegar based dressing.
