Meatless Monday with Raw Vegan Baby Collard Tacos

As it is the beginning of a new year, you may be wanting to start the year off with a renewed commitment to healthy eating and today’s recipe will be perfect plus everyone loves tacos. Today’s recipe for raw vegan baby collard tacos are healthy, satisfying and delicious and can be made quickly. This great recipe comes courtesy of RAW Food for Truth, a site that shares knowledge of “living foods lifestyle. Nutritious, raw, vegan recipes” and definitely worth visiting.

Baby Collard Tacos (makes 6 tacos)

  • 1/2 cup sunflower seedsmeatless-monday-raw-vegan-baby-collard-taco
  • sliver of red onion
  • 1/2-1 jalapeno
  • juice of half a lemon/lime
  • cumin, cayenne, salt
  • handful of chopped cilantro
  • 1 small tomato
  • collard leaves to act as taco shells.


  1. Soak the sunflower seeds for 6 hours or overnight.
  2. In a food processor, combine and pulse just a couple of times the seeds, the onion, jalapeno, lemon juice, and the spices.
  3. Mix in the cilantro.
  4. Fill your collard leaves with a few spoonfuls of the filling and top each with chopped tomatoes.
  5. To top it all, drizzle nut/seed cheese on them if you wish.

Though the seeds need to be soaked for at least six hours, a great way to be able to make this in a pinch is to keep soaked seed in the fridge. This is a useful tip if your cooking regularly requires soaked seeds so they are always available to you.

You can use any vegan or raw vegan cheese you like with this recipe; it doesn’t have to be a cheese you can drizzle. In fact a finely grated cheese might be a nice accompaniment to the taco. Another addition to this recipe might be fresh guacamole, which is always a crowd pleaser.
