Meatless Monday with Vegan 3-Step Spinach Pesto Pasta Salad

Welcome to the Miratel blog for our Meatless Monday vegan recipe share. Miratel took the Meatless Monday pledge to support reducing meat consumption 15% by eliminating it one day per week to preserve the health of our planet. We consider our support of this great movement part of our CSR business strategies as it spreads awareness of the impact of our food choices on our environment.

It’s getting warmer (or it should be soon anyway) and with the change of seasons generally comes a change of food choices. Lighter, healthier food tends to be more popular in the summer months because, well, it sucks feeling full and heavy in the heat. Plus who wants to spend more time than necessary in a hot kitchen when the sun is shining outside? Today’s recipe for 3-Step Spinach Pesto Pasta Salad is a quick, delicious and satisfying option perfect for a quick meal through the week during the summer months. According to the talented chef who created this great dish, said “Busy day? Need to whip up something quick for dinner? This three-step spinach pesto pasta salad is the answer to all your troubles! Spinach, pine nuts, marinated sun-dried tomatoes and cheese vegan Parmesan are blended up into the perfect pesto for tossing with your favorite pasta — so even if you’re gluten-free or grain-free, this pasta can rescue dinner.” This tasty yet nutritional recipe comes courtesy of Gabrielle St. Claire of Eat, Drink, Shrink, an excellent website with amazing, healthy vegan recipes and images via One Green Planet.
