Meatless Monday with Vegan Smoky Black Bean Patties with Pineapple Avocado Salsa

Hello and welcome (back) to the Miratel blog for another edition of our Meatless Monday vegan recipe share. Burgers are a quintessential part of summer, and just because you want to eat a vegan meal doesn’t mean you have to give up this treat. In fact, finding new vegan dishes that would fit in a summer BBQ setting might seem daunting; however, we’re here to help. Today we’re continuing that series with this recipe for vegan, gluten-free smoky black bean patties with pineapple avocado salsa. This delicious dish comes from Jenn Sebestyen via One Green Planet, an amazing resource for all things vegan.

INGREDIENTS (serves 8-10)

Millet Black Bean Patties:

  • 1 cup cooked milletmeatless monday smoky black bean patties pineapple salsa
  • 1 15oz can black beans (or 1.5 cups)
  • 1 carrot, shredded (about ½ cup)
  • ¼ cup shredded onion (about one quarter of a medium onion)
  • ½ cup frozen or fresh corn kernels
  • ¼ cup cornmeal
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • ½ tsp garlic powder
  • ½ tsp cumin
  • 1 tsp tamari
  • salt/pepper to taste
  • Oil for pan frying (I used Grapeseed Oil)

Spicy Chipotle Sauce:

  • 2 chipotle peppers in adobo sauce
  • ¼ cup pineapple juice
  • ½ avocado
  • ¼ cup cashews (soaked for 1-2 hours if you don’t have a high speed blender)
  • 1 tbsp apple cider vinegar
  • 2-3 tbsp water or non dairy milk to thin

Pineapple Avocado Salsa:

  • 1½ avocado, diced
  • ¾ cup diced pineapple chunks
  • Juice of 1 lime


Spicy Chipotle Sauce:

  1. Combine all ingredients, except water, in a high speed blender and puree until smooth. Add water as necessary to thin to desired consistency.
  2. Pineapple Avocado Salsa:
  3. Combine all ingredients in a small bowl and toss to combine.

Millet Black Bean Patties:

  1. Place black beans in a large mixing bowl and smash with a potato masher or fork. Add all the other ingredients and mix well to combine.
  2. Take about ¼ cup of the mix and form it into a patty with your hands. Place on a plate and repeat with the remaining mixtures.
  3. Heat 1-2 tbsp of oil in a pan on the stove over medium-high heat. Once hot, place 2-4 patties in the pan, spaced evenly (depending on pan size – do not over crowd the pan).
  4. Cook 4-5 minutes each side until crispy on the outside and heated through. Adjust heat as necessary while cooking….every stove is different. You want it hot enough to crisp up the outside, but not too hot that it burns before the patty is heated through.

You can enjoy this burger wrapped in Boston or leaf lettuce, over a bed of greens or on a gluten free bun served alongside your favourite summer salad.
