Meatless Monday with Vegan Super Bowl Sandwiches

Welcome to the Miratel blog for a very special Super Bowl edition of our vegan Meatless Monday recipe series. The Meatless Monday pledge aims to reduce meat consumption 15% by eliminating it one day per week to preserve personal and planetary health. You may well be aware that Miratel has taken the pledge to support this great initiative, which we have included as part of our CSR business strategies to spread awareness of the impact of food choices on our environment.

A meat-free Super Bowl party may seem impossible but it doesn’t have to. There is no reason why you can’t (kindly) enjoy the game so that the only animal product is the one being moved around Levi’s Stadium by the Panthers and the Broncos. We have celebrated a vegan game day before in 2015 and 2014 and in 2013. Today we are featuring a series of sandwiches that are sure to satisfy even the most avowed carnivores from kickoff to the last down. We are not saying these recipes are necessarily your healthiest options, but they are plant-based and healthier than their animal-product counterparts. Vegan Vietnamese Tofu Banh Mi Sandwich Ingredients

For the pickled daikon and carrot

  • 1 daikon radish, spiral sliced (or cut into thin matchsticks)
  • 2 medium carrots, spiral sliced (or cut into thin matchsticks_
  • 1 cup rice wine vinegar
  • 1 cup water
  • 1/4 cup sugarvegan tofu banh mi sandwich
  • 2 tbsp salt

For the mushroom pate

  • 2 portabello mushrooms rough chopped
  • 1/2 small onion, chopped
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 1 tbsp liquid aminos
  • Fresh ground black pepper

For the tofu

  • Thinly sliced tofu (about three or four slices per sandwich, pressed to remove excess water)
  • 1 tbsp sesame oil

For the sriracha mayo

  • 3 parts vegan mayo
  • 1 part sriracha sauce

To build the sandwich

  • Crusty sandwich rolls
  • Cilantro for garnish

Bad Ass Vegan Fish Sandwich Ingredients

Vegan Fish Sticksbad ass vegan fish sandwich

  • 1 package firm or extra firm tofu (12oz.)
  • 1/2 cup cornmeal
  • 1/2 cup whole wheat flour (use rice flour for a gluten free option)
  • 1 tablespoon dried basil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoons dulse flakes
  • 1 tablespoon sea salt
  • 10 turns fresh black pepper
  • 1/4 cup unsweetened non-dairy milk
  • 1 cup high heat oil for frying

Vegan Tartar Sauce

  • 1/2 cup vegan mayo
  • 1/4 cup sweet pickle relish
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon sugar
  • 5 turns fresh black pepper

Sloppy Mexican-Spiced Roasted Vegan Sandwich Ingredients

Roasted vegetables

  • 1 cup vegetable brothsloppy mexican spiced roasted vegan sandwich
  • 1/4 cup Bragg Liquid Aminos
  • 1 heaping Tbsp. tomato paste
  • 1/2 tsp. smoked paprika
  • 1 tsp. dried onion flakes
  • 2 tsp. cumin
  • 1 tsp. Chipotle Tabasco
  • 2 cloves garlic, minced
  • 1 onion, halved and sliced thinly
  • 1 small eggplant, sliced into rounds
  • 1 small yellow squash, sliced into rounds
  • 1 small zucchini, sliced into rounds
  • 4-5 cremini mushrooms, quartered
  • 4-5 baby red or white potatoes, thinly sliced
  • juice of 1/2 a lime
  • chopped cilantro, for garnish


  • 2 avocados
  • 1/2 tsp. cumin
  • splash Chipotle Tabasco
  • juice of 1/2 a lime

Other stuff

  • Sweet & Tangy Green Chile-Chipotle-Cilantro Dressing, to taste
  • 4 really good, crusty rolls (that’s homemade pan Siciliano in the photos), sliced
