Meatless Monday with Vegan Thanksgiving Desserts

Welcome to the Miratel blog for a special Canadian Thanksgiving weekend edition of our Meatless Monday vegan recipe share. Miratel took the Meatless Monday pledge to support reducing meat consumption 15% by eliminating it one day per week to preserve the health of our planet. Given that this is the Canadian Thanksgiving long weekend, we are sharing a few desserts that would be perfect to help celebrate the holidays. We have previously featured several savoury meat-free Thanksgiving dishes like a Gluten-Free, Vegan Turkey and Lentil and Mushroom Loaf with Savoury Potato Filling. No Bake Vegan Dark Chocolate-Pumpkin Pie Ingredients

  • 15oz pureed pumpkin (or 1 can)
  • 1 tsp pure vanilla extract
  • 1 tsp cocoa powder
  • level 1/4 tsp salt
  • 1 cup chocolate chips
  • optional: sweetener (Taste first. I thought it was sweet enough without additional sweetener.)

Vegan Chocolate Banana Cream Pie Ingredients

For the pie

  • 1 graham cracker pie crust (look to see if it contains honey- if concerned, many don’t)
  • 3 oz. semi sweet baking chocolate (dairy free)
  • 3 bananas, ripe
  • 2 cups almond milk or other non dairy milk
  • 1 package vanilla pudding mix (not instant the stovetop kind)

For the Coconut Whipped Cream Ingredients (optional)

  • 1 can coconut milk (regular, not light)
  • 2-3 teaspoons maple syrup or confectioners sugar
  • 1/2 tsp vanilla extract or vanilla powder

For the Chocolate Drizzle Ingredients (optional)

  • 1 oz semi sweet baking chocolate (dairy free)

Apple Loaf Cake Ingredients

  • 1½ cup flour
  • ⅓ cup brown sugar plus another ¾ cup brown sugar
  • 1 cup apple butter or applesauce
  • ½ cup vegan butter or coconut oil
  • 1 teaspoon cinnamon
  • 1¾ teaspoon baking powder
  • 1 Tablespoon vanilla extract
  • ½ cup almond milk
  • 2 apples, peeled and diced small

Desserts can sometimes get overlooked when planning a vegan meal but they don’t have to especially when delicious holiday-appropriate options like these are available and so easy to make.
