Meatless Monday with Vegan Zucchini Chickpea Burger

If you are a full-time vegan, summer BBQ’s might seem daunting but our weekly recipe share aims to simplify that with a new vegan summer dish each Monday and there is no food more synonymous with summer and BBQ’s than burgers. Just because you want to eat vegan doesn’t mean you have to pass on them especially when you have flavour-packed recipes like today’s zucchini chickpea burger. This great recipe comes from Gunjan Dudani via One Green Planet, an amazingly reliable resource for all things planet-friendly.

INGREDIENTS – serves 8

  • 2 cups chickpeas (boiled, drained and mashed)meatless monday vegan zucchini chickpea burger
  • 2 cups zucchini (grated and squeezed)
  • 1 cup grated carrots
  • 1 jalapeno pepper (mashed or chopped)
  • ¼ cup chickpea flour
  • 2 tbsp. sriracha sauce
  • 1 tsp cumin powder (dry roasted)
  • 1 tsp garlic (chopped or mashed)
  • 1 tsp salt


  1. Combine all the ingredients in a mixing bowl and mix very well with your hands.
  2. Divide the mix into 8 equal portions.
  3. Heat your grill or nonstick pan and grease it with cooking spray.
  4. Now take 1 portion of the mix between palms and form a ball gently. Then carefully press in the middle of the ball between palms to form cutlet/patty shape.
  5. Now put the patty directly on the grill or nonstick pan and let it cook for few minutes until one side turns brown then flip the patty to the other side and cook again until brown.
  6. Repeat the same process for all the patties.
  7. Serve warm or at room temperature with your favorite burger buns along with sliced tomatoes, lettuce and cheese and some Caesar salad on the side or as lettuce wraps with some ketchup on the side.

You can also bake these patties in a pre-heated oven at 400 degrees Fahrenheit on a lined cookie sheet for at least 30 minutes or until browned. If grilling on the BBQ, you may need to add bread crumbs to the burger mix to make a dry consistency. Don’t forget to make sure the bread crumbs are also gluten-free.  A fantastic tip with making this recipe is to measure the zucchini after you grate it and squeeze the water out. This will give you a true measurement and keep your mixture together better as you won’t have excess liquid. Also, try to remove the larger seeds if possible.

At only 206 calories, this gluten free burger patty is also great to eat without a traditional bun – you can use a lettuce- bun/wrap using Boston or red/ green leaf lettuce. Serve this zucchini chickpea burger as you would any regular burger alongside fries, coleslaw or just a great salad.
