Celebrity Chef Delivers Everyday Gourmet to your Door and shares a Meatless Monday Recipe

Below is a vegetarian recipe Ken has been kind enough to share with us from his $10 Gourmet cookbook which supports Meatless Monday.  Enjoy.

Eggplant & Tomato Stackers by Ken Kostick
Serves 2

Eggplant is one of those vegetables you’re not sure what to do with.  The solution is delicious and quite impressive when served.

Eggplant and Tomato StackersIngredients:
• 1 egg
• ¼ cup (60mL) milk
• ½ cup (125mL) Panko bread crumbs – $1.83
• ½ tsp (2mL) cumin
• ½ tsp (2mL) sea salt
• ½ tsp (2mL) ground black pepper
• 2 Tbsp (30mL) olive oil
• 1 small sized eggplant, unpeeled, cut into ½ inch (1 cm) slices – $1.49
• 1 red tomato, sliced – $0.88
• ¼ cup (60mL) fresh basil, chopped – $0.99
• 1 ball mozzarella, sliced – $2.39

Total – $7.58

Directions:

1. In a bowl combine the egg and milk and mix.  In a separate bowl combine the Panko bread crumbs, cumin, salt & pepper and mix.
2. In a large sate pan that is oven proof heat the olive oil.  Dip the eggplant first into the wet mixture, then into the dry mixture and start to sauté on medium heat turning once.
3. Once the eggplant is turned, put a slice of tomato, some basil and a slice of mozzarella.  Repeat for all slices and place stackers into pre-heated over at 350°F for 5-8 minutes or until mozzarella cheese starts to melt.

Low-Fat Option:
• Leave out breadcrumbs.
• Use skim milk.
• Use low-fat mozzarella cheese.
