Meatless Monday with Harvest Vegetable Curry

Hello and welcome (back) to the Miratel blog for another Meatless Monday. We took the Meatless Monday pledge as part of our CSR business initiatives in support of reducing meat consumption one day per week to improve the health of people and the planet. Every Monday we share a different vegetarian recipe and try to keep them as simple and do-able as possible.

Tonight we’ll be enjoying the flavors of India with a harvest vegetable curry. This recipe is going to be hearty and warming on a cool fall night and gives you an opportunity to incorporate all those healthy vegetables you have in your crisper. This recipe is full of flavor and is quick to make and comes courtesy of Chatelaine Magazine. Let’s get cooking.

Ingredients:

  • 1 large onion
  • 1 tbsp (15 mL) vegetable oil
  • 4 large tomatoes
  • 2 tbsp (30 mL) Indian curry paste
  • 2 tbsp (30 mL) grated fresh ginger
  • 1 tbsp (15 mL) ground coriander
  • 1 small eggplant
  • 2 zucchini
  • 1 cup (250 mL) vegetable broth
  • 1/4 cup (50 mL) mango chutney
  • 1 small cauliflower
  • 19-oz (540-mL) can chickpeas (optional)

Directions:

  1. Finely chop onion. Heat oil in a very large, wide saucepan over medium heat. Add onion and sauté to soften a little, from 2 to 3 min. Coarsely chop tomatoes and add to onion along with seeds and juice. Stir in curry paste, ginger and coriander. Stir frequently until saucy, 4 to 6 min.
  2. Meanwhile, slice unpeeled eggplant into bite-sized strips. Cut zucchini in half lengthwise, then slice into half moons. Add to tomato mixture. Stir often until softened slightly, about 5 min. Add broth and chutney. Bring to a boil. Break cauliflower into florets and mix in. Cover and simmer, stirring often, until it’s saucy and cauliflower is tender, from 20 to 30 min. Drain, then rinse chickpeas and add for the last minute of cooking.

This recipe for harvest vegetable curry will yield six to eight servings and can be prepped in twenty minutes and then requires thirty minutes to cook. If you don’t have time on Monday to whip this up then you can make it the night before, in fact it will last in the fridge for up to three days. This is also a great curry to make a large pot of and then freeze it for further use, as it will last up to two months in the freezer. When freezing meals remember to label them clearly with the name of the dish, date you made it, a best before date, and reheating instructions. By taking this extra step any member of family can pull this meal out and heat it without issue. Complete this meal by serving over basmati rice.
