Meatless Monday with Spicy Honey Vegetable Stir Fry
Hello and thanks for joining us for another Meatless Monday. Miratel took the Meatless Monday pledge which aims to preserve the planet and its inhabitants by eliminating meat one day per week as one of its CSR business initiatives. Each week, we feature a different recipe to help make meal planning sans meat easier.
For dinner tonight we are making a healthy, gluten-free spicy honey vegetable stir fry that is also fast to make and delicious. Depending on which side of the “is honey vegan?” debate you stand, it’s either vegan or beegan too. If they do not eat honey you can substitute it with agave or maple syrup although it will result in a different (but still good) taste experience. Ingredients (makes 4 servings)
- Cooked brown rice (enough for 4 servings)
- 1 green pepper
- 2 cloves of garlic
- 1 onion
- 1 x 8 oz. can of diced water chestnuts (rinsed and drained)
- 1 zucchini
- 1-2 tablespoons honey
- 1/2 teaspoon crushed red pepper flakes (to taste – if you like it hotter, add more)
- grape see oil
- garlic salt (to taste)
- fresh ground pepper (to taste)
Directions:
- Cook the rice according to the package. Cut all the vegetables, except for the water chestnuts, into thin slices.
- Coat the bottom of a pan with grape seed oil, and heat. (You can sub olive oil, but I like the taste that the grape seed oil leaves. It much cleaner and transparent. This oil also takes high temperatures really well, so it doesn’t burn your veggies)
- Add the garlic, onions and season with garlic salt and pepper. Cook for a minute and add the zucchini, peppers and water chestnuts. Stir in the crushed ground red pepper, and cook for about a minute. Drizzle honey over the veggies, mix and cook until desired tenderness.
This recipe for spicy honey vegetable stir fry will yield four portions and can easily be expanded upon if needed. You can add a dash of soy when cooking the vegetables for added flavour or if you are gluten-free, you can use Bragg’s. Water chestnuts can be found in the international aisle of most major grocery stores. Cooking brown rice is not at all daunting but if you are hesitant, many brands are even selling a brown variety of converted rice too. There are many different stir fry recipes available, and this is a great one to add to your repertoire especially as fresh spring (and soon-to-be summer) vegetables become available so feel free to play with the vegetables you include.
