Meatless Monday Recipe – Peanut Butter Pancakes
Happy Meatless Monday! This recipe will certainly start the day off well. In case you’re new to the blog, we have joined the Meatless Monday campaign which is a non-profit initiative in association with the Johns Hopkins Bloomberg School of Public Health. It’s part of a growing worldwide movement to reduce consumption of animal products in favour of more plant-based meals to fight global warming and improve our personal health.
This recipe is a great vegan turn on a classic morning staple courtesy of Post Punk Kitchen. Serve topped with more peanut butter for added protein or sliced bananas for a classic combination.
Ingredients
- 1 1/2 cups oats
- 1 teaspoon baking powder
- 1/2 large banana
- 1 1/4 cups soy milk
- 3 heaping Tablespoons peanut butter
Directions
- Put oats in blender and blend until a flour is formed. Pour into a big bowl and combine with baking powder.
- In a seperate bowl, mash the banana and mix with the soy milk and peanut butter.
- Combine wet and dry ingredients. Mix well and let the batter set 5 minutes.
- Prepare as you would any vegan pancake! Grease a skillet and pour the batter out, cooking on both sides for about 2 minutes or so. Serve with maple syrup, more peanut butter or chop up a banana and serve over it.
This is great for either breakfast, lunch or dinner – pancakes aren’t just for morning. If you’d like to join the movement or read more, go to meatlessmonday.com. If you happen to miss a Monday, another will be by soon enough – you can hop on then. One day is a small price to pay. Enjoy!
