Meatless Monday with Garlic and Herb Three Cheese Pizza from Rachel Ray

Happy Meatless Monday!  Here’s another tasty vegetarian kid-friendly recipe courtesy of popular Food Network star Rachel Ray and her hit show 30 minute meals.  As you may or may not know, Miratel supports the Meatless Monday campaign – a non-profit initiative in association with the Johns Hopkins Bloomberg School of Public Health.  It’s part of an eco-friendly worldwide movement to reduce consumption of animal products in favor of more plant-based meals to combat global warming and help improve our personal health.  This week we’re featuring a vegetarian kids recipe from Rachel for Garlic and Herb Three Cheese Pizza.

Ingredients

  • 1 ball fresh pizza dough, store bought or from your favorite pizzeria
  • 2 cloves garlic, finely chopped
  • Handful parsley leaves, finely chopped
  • 1 cup ricotta cheese
  • 1 (5-ounce) round soft cheese with herbs, crumbled (recommended: Boursin)
  • 1 teaspoon lemon zest, eyeball it
  • 2 cups shredded sharp provolone cheese
  • Few sprigs fresh thyme, leaves chopped or 1/2 teaspoon dried

Instructions:

Preheat oven to 425 degrees F.

Stretch dough out and form a thin round. Use a little flour or cornmeal on your hands if dough sticks. Mix the garlic, parsley, ricotta, herb cheese and lemon zest. Spread the soft cheese mixture across the pizza dough to the edges then top with an even layer of provolone. Scatter thyme over the cheese mixture. Bake until crisp and bubbly-brown on top, 18 to 20 minutes.

This is another delicious vegetarian recipe that’s heart-healthy and earth-friendly.  More importantly for you parents out there, it’s a kid-friendly vegetarian recipe – what child doesn’t enjoy a little cheesy pizza?  All that and to respect your busy schedule, it’s ready in 25 minutes!
