Welcome (back) for the latest installment of our Meatless Monday recipe share. Meatless Monday aims to reduce meat consumption 15% by eliminating it one day per week to preserve personal and planetary health. Our recipe today is for a delicious and versatile massaged kale salad with roasted chickpeas and baked tofu. This great recipe comes via Cadry’s Kitchen and proves that a vegan dish can be satisfying, filling and, most importantly, full of nutrients. This recipe serves 4.

Raw Kale Salad in Creamy Garlic Dressing Ingredients:

• 1/3 cup raw cashews
• ¼ cup water (plus additional water for soaking cashews)
• 1 Tbsp freshly squeezed lemon juice
• 1 Tbsp low-sodium tamari
• 1 heaping Tbsp fresh cilantro
• 2 cloves garlic, roughly chopped
• 1 bunch curly kale
• Any favorite raw vegetables, chopped (for the kale salad)
