Meatless Monday with Sesame Szechuan Noodles
Hello and welcome (back) to Miratel’s blog and thank you for joining us for another Meatless Monday vegetarian recipe share. The Meatless Monday pledge aims to reduce meat consumption 15% by eliminating it just one day per week to preserve personal and planetary health. Take-away is quick and easy if you want to have dinner on the table on a hurried weeknight however it is not without a downside. Fast prepared food tends to be high in fat, sodium and may even contain preservatives. There are exceptions to this rule but traditionally speaking, this tends to be the case. That is why for dinner tonight we’re making a fast meal that tastes great and mimics something you might pick-up on the way home. Our Sesame Szechuan Noodles recipe today is courtesy of Yummly, a great recipe site that confidently boasts Every Recipe In The World. Need I say more? Now let’s get cooking.
Ingredients
- 8 ozs Asian noodles (thin dried, linguine)
- 4 tbsps sesame oil (oriental)
- 3 tbsps peanuts (chopped)
- 2 tbsps peeled fresh ginger (finely chopped)
- 3 garlic cloves (minced)
- 6 tbsps teriyaki sauce (bottled)
- 2 tbsps fresh lime juice
- 1 tsp chili garlic sauce
- 1 ½ cups red onions (thinly sliced green)
Directions
- Cook noodles in large pot of boiling salted water until tender but still firm to bite. Drain; return noodles to same pot. Mix in 1 tablespoon oil and peanuts.
- Heat 3 tablespoons oil in heavy small skillet over medium-low heat. Add ginger and garlic; stir 10 seconds. Add teriyaki sauce, lime juice and chili sauce; simmer 30 seconds. Mix sauce and onions into noodles. Season with salt and pepper. Serve warm or at room temperature.
The recipe makes 6 portions but can be adjusted as needed. Feel free to get creative with the noodles you choose to use – whole wheat, brown rice or egg noodles depending on your dietary goals or restrictions. If you only have spaghetti-type pasta on hand, you can use that in a pinch. You can also add your favourite complementary vegetables to the dish or serve them on the side. Julienne carrots, Chinese cabbage, peppers, bean sprouts, bok choy or broccoli would all be good options just tossed in a fry pan with fresh garlic and a little oil. The best part of making something like this is that you can experiment with it and reinvent it every time or keep it the same if you’d prefer.
