Meatless Monday with Vegan Pulled “Pork” BBQ Sandwiches
Welcome to the Miratel blog for another summer edition of our Meatless Monday vegan recipe share. The summer months bring about thoughts of BBQs and just because you’ve made the choice to go vegan doesn’t mean you have give up your favourite foods or flavours. Recently, we’ve been sharing with you some great summer BBQ recipes like a Vegan Grilled Vegetable and Tofu “Lasagna” with Pesto, a Vegan Eggplant Crunchburger, a Vegan Kidney Bean & Walnut Burgers with Mississippi Comeback Sauce, a Vegan Japanese Eggplant Dog, a Vegan Bistro Beet Burger, the Ultimate Sriracha Veggie Burger and Vegan Tofu Kebabs with Cilantro Sauce. Today we’ll be adding to this list with a vegan twist on a classic Southern dish: pulled pork. Our vegan pulled “pork” BBQ sandwiches come by way of Vegetarian Times.
Ingredients (serves 6)
- 2 Tbs. olive oil
- 1 small onion, chopped (about 1 cup)
- 12 cloves garlic, minced (about ¼ cup)
- 1 15-oz. can tomato sauce
- 1 Tbs. horseradish
- 2 tsp. molasses
- 2 tsp. cider vinegar
- 1 tsp. lemon zest
- 2 8-oz. pkgs. seitan, shredded
- 6 sandwich rolls
- coleslaw for garnish, if desired
- hot sauce, to taste
Directions
- Heat oil in saucepan over medium heat. Add onion, and sauté 7 minutes, or until soft. Add garlic, and cook 1 minute more.
- Stir in tomato sauce, and cook 3 minutes. Add horseradish, molasses, vinegar, lemon zest and ½ cup water, and simmer over low heat 30 minutes, stirring occasionally. Fold in seitan.
- Fill rolls with barbecue mixture, and top with coleslaw, if desired. Serve with hot sauce.
You can make a simple creamy coleslaw with cabbage, vegan mayo, a little apple cider vinegar and salt and pepper. This vegan pulled “pork” BBQ sandwich and coleslaw combine to form a complete (and delicious) meal.
