Meatless Monday with Vegan Savoury Pancake Tuesday 2014
You might think that it would be difficult to have a vegan Pancake Tuesday but that doesn’t have to be the case. Hello and welcome (back) to another flavour-packed vegan Meatless Monday recipe share. Miratel supports Meatless Monday as it encourages eliminating meat from your diet one day per week to preserve the health of our planet (and ourselves!). We consider our support of this great movement part of our CSR business strategies as it spreads awareness of the impact of our food choices on our environment.
Remember that going vegan doesn’t mean you have to give up eating your favourite foods or celebrating traditions and today’s perfect vegan savoury pancake recipe proves just that. Our thanks to the Vegan Visitor for this delicious spin on a traditional breakfast classic.
Ingredients:
- 1 Leek, white & light parts only, diced & divided
- 2 Cups Sliced Crimini Mushrooms, divided
- 2/3 Cups All Purpose Flour
- 1/3 Cup Whole Wheat Flour
- 1 Tablespoon Baking Powder
- 1/4 teaspoon Salt
- 1 Cup Unsweetened Soy Milk
- 1/3 Cup Cooked Wild Rice
- 2 Tablespoons Safflower Oil, plus more for frying
Directions:
- Finely dice the leeks and slice the mushrooms.
- In a lightly oiled, large frying pan, sauté the mushrooms until soft and golden.
- Remove mushrooms from the pan and reserve.
- Add the leeks to sauté until softened.
- Roughly chop 1/2 cup of the mushrooms then add to the leeks.
- In a large bowl, combine the flours, baking powder and salt. To it, add the wild rice and 1/3 of a cup of the mushroom leek mixture stirring to coat with the flour.
- Add the milk and oil just mixing until everything is just wet and combined.
- In a clean, hot frying pan, add a small amount of oil.
- Drop heaping tablespoonfuls of the pancake mixture into the frying pan and cook over a medium-high heat.
- Once the edges are firm and golden and the batter starts to bubble, flip each pancake to cook the other side until golden.
- Serve hot with a spoonful of the remaining mushrooms and leek mixture.
Serve with a side of your favourite hot or cold veggie. Enjoy!

I’d love to try your vegan Savoury Pancakes on a Tuesday this year but I AM anaphylaxis to rice and would probably use quinoa. Again I AM 90% raw foodie and for a treat I make something vegan that requires me to dust off my pots/pan and turn on my stove or oven.
