Meatless Monday with Vegetarian Fajitas

vegfajWelcome to another Meatless Monday! For tonight’s dinner we are heading south for a classic southwestern dish, fajitas. Even though fajitas are generally made with meat, chicken or shrimp ours use a variety of different vegetables. You can enjoy this family favorite any day of the week especially on a Meatless Monday. This twist on a classic comes by way of food.com.

In a large bowl combine olive oil (1/4 cup), vinegar, oregano, chili powder, garlic salt, salt, pepper and sugar. To the marinade add the zucchini, yellow squash, onion, green pepper and red pepper. Marinate vegetables in the refrigerator for 30 minutes. Heat oil (2 tbsp) in a large skillet over medium-high heat. Drain the vegetables and sauté until tender, about 10 minutes. Stir in the corn and beans; increase the heat to high and sauté for 5 more minutes. Serve with warmed tortillas and the toppings of your choice: your favorite salsa, cheese, guacamole, olives.

This recipe for vegetarian fajitas will serve six, but the recipe can be adjusted as needed. Using the zucchini, yellow squash and a variety of peppers is perfect for this time of year as fresh and locally grown the ingredients are readily available in the local grocery store and farmer’s market. You can keep everyone at the table happy by having a variety of organic salsas that range from mild to spicy. This is great dish that will even get kids excited about a meatless meal because it is fun, interactive and delicious.     Wow this looks lovely. At the risk of upsetting vegetarians and vegans worldwide, i am a meat eater but I have to say i often choose the meatless option and this looks like my kind of meal. Yum!
