Meatless Monday with Spinach and Artichoke Mushroom Casserole
Hello and welcome (back) to another Meatless Monday. As a green call centre, we support the Meatless Monday movement in support of reducing meat consumption to improve personal and planetary health.
On the menu tonight is a spinach and artichoke mushroom casserole. This creamy vegetable dish is a wonderful and fast meal that incorporates convenience products which makes it perfect for after work cooking. Although we tend to promote whole cooking, sometimes time just doesn’t permit so that’s where recipes like this come in handy. This recipe comes courtesy of Canadian grocery chain Longos so let’s get started.
Ingredients:
• 2 tbsp extra virgin olive oil
• 1 container (22 7 g) fresh brown mushrooms, sliced
• 1 onion, chopped
• 4 cloves garlic, minced
• 1 tsp each dried thyme and oregano
• 6 cups fresh baby spinach
• 1 jar (24 oz) marinated artichokes, drained
• 1 tub (227 g) artichoke and parmesan dip
• 1/2 cup shredded Asiago cheese
Directions
In large nonstick skillet, heat oil over medium high heat and cook mushrooms, onion, garlic, thyme and oregano for about 10 minutes or until liquid evaporates and mushroom begin to turn golden. Stir in spinach and cook for about 3 minutes or until wilted and liquid is evaporated. Add artichokes and artichoke dip and cook stirring for about 2 minutes or until heated through. Pour into shallow baking dish and sprinkle with cheese. Bake in 400°F oven for about 20 minutes or until golden and bubbly. Let stand for about 5 minutes before serving.
This tasty dish will yield about four to six portions, however you could increase the proportions and bake it in a larger dish if you cooking for a crowd. As a main dish, complete the offering with some brown rice, a balsamic salad and some roasted vegetables like cauliflower.
